I don’t think I have shared this recipe before. It is a favorite. I make it every time I think our dinner might possibly go with it. Curry, Spagetti, Gyros.
2 Cucumbers
1 Tomato
A few Slices of Red Onion
Balsamic Vinager
EVOO
Salt
Pepper

Slice cucumbers thin. Slice tomatoes into thin quarters.Slice a few rings off of the red onion.
Add into a bowl with equal parts of EVOO and Vinager. Enought to generously coat the vegetbales.
Salt and Pepper to taste. Mix.
I now add to a large ziplock bag and throughly mix. Let sit while I prepare the rest of the dinner. Return to bowl.
Serve.
It is delicious!

This is a favorite little product of mine. We eat Curry about once a week. It is delicious. I usually make some sort of vegetarian curry, because I like it. But you can also make meat curries.
When time is short, or I just want to make a meal quicker. I use this little product to make a quick and delicious curry.

With Thanksgiving just days away, I thought I would share one of my favorite thanksgiving recipes. This is a yummy, delicious cranberry sauce and super easy to make.
1 cup white sugar
1 cup orange juice
1 12 ounce package fresh cranberries
In a medium saucepan over medium heat, dissolve the sugar in the orange juice. Stir in the cranberries, and cook until they start to pop (about 10 minutes). Remove from heat, and transfer to a bowl. Cranberry sauce will thicken as it cools.
The reviews at dinner last night were good, but a little tart. I guess I liked it a little tart.

This is a family favorite, and one we modified from a Rachael Ray recipe.
- Salt
- 1 pound short cut pasta.
- 2 slices rye bread
- 3 tablespoons butter plus some for buttering toast
- A handful fresh parsley leaves
- 1 teaspoon paprika
- 3 tablespoons all-purpose flour
- 2 cups milk
- 1/4 cup spicy brown deli mustard (recommended: Gulden’s)
- 1 1/2 cups shredded Swiss cheese
- 1 1/2 cups shredded yellow Cheddar
- 1 pound good quality deli corned beef, sliced as thick as bacon, chopped
- 1 pound sauerkraut, rinsed and well drained
Directions
Bring a large pot of water to a boil for the pasta. Salt water and cook pasta to al dente.
While pasta cooks, toast rye bread in toaster then butter hot bread. Coarsely chop bread and place in food processor. Add parsley and paprika to bread and process into bread crumbs, reserve.
Heat a sauce pot over medium heat. Add butter to pot and melt, whisk in flour 1 minute then milk. Season the sauce with salt and pepper, thicken sauce 5 to 6 minutes then stir in mustard. Melt 2/3 of the combined cheeses into the sauce.
Preheat oven to 350F.
Drain pasta and return to hot pot. Toss hot pasta with chopped meat and sauerkraut to combine, stir in cheese sauce and coat. Transfer mac n cheese to casserole and top with bread crumbs and remaining cheese. Bake for 20 minutes.

3 C sugar
1 C oil
4 eggs
2 tsp vanilla
Mix together until combined
3 1/2 C flour
1 1/2 tsp salt
2 tsp cinnamon
1 tsp nutmeg
2 tsp baking soda
sift dry ingredients, then add wet to dry
2/3 cup milk
1 3/4 cups pumpkin
add half the milk, mix, half the pumpkin, mix again,
the rest of the milk, mix, the rest of the pumpkin, mix
optional:
1 cup chopped nuts
1 cup chocolate chips
(just fold these in)
Bake at 350 for 20 minutes or until a cake tester comes out clean

This one is super easy and really delicious.
4 potatoes
1/4 onion
1 can evaporated milk
1 can milk
4 tablespoons of butter
Salt and Pepper to taste
Peel, cook, and mash potatoes
add chopped onion.
Mix in evaporated milk, milk, butter, salt and pepper. Heat and simmer on low.
Serve.
This recipe is very versatile.

This is a family favorite and so easy to make.

1 package spaghetti noodles prepared as directed on package
1 pound ground Italian Sausage
1 large can tomatoes
1 onion diced
1 clove garlic minced
******
Brown Italian Sausage. Add to pan Tomatoes, Onions, and garlic.
Heat.
Mix with spaghetti noodles
******

Avocado and Cucumber Salad
2 cucumbers (cubed)
2 Avocados (cubed)
4 tablespoons fresh, chopped Cilantro
1 minced garlic clove
2 tablespoons minced green onion
Juice from 1/4 lemon
Juice from 1 lime
salt and ground fresh pepper to taste

1 red onion (thinly sliced and chopped large)
1 cup balsamic vinaigrette dressing
dash of black pepper
